Air Fryer Zucchini Parmesan is a quick and flavorful dish featuring tender zucchini cubes seasoned with Italian herbs and topped with golden, melted parmesan cheese. This easy recipe uses an air fryer to create a perfectly crisp and delicious vegetable side or snack in under 15 minutes.

Ingredients

Vegetables

  • 3 medium zucchini, cubed (approximately 600 g or 4 cups)

Seasonings

  • Spray olive oil
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste

Cheese

  • 3 heaping tablespoons grated parmesan (about 25 g)

Instructions

  1. Prepare Zucchini: Cut the zucchini into small, even cubes to ensure uniform cooking throughout.
  2. Season: Lightly coat the zucchini cubes with spray olive oil, then evenly season with Italian seasoning, salt, and black pepper for balanced flavor.
  3. Add Parmesan: Sprinkle grated parmesan over the seasoned zucchini and gently toss to distribute the cheese evenly without overmixing, maintaining the cubes’ integrity.
  4. Preheat Air Fryer: Preheat the air fryer to 200°C (392°F) for 3 minutes to ensure optimal cooking temperature.
  5. Air Fry: Insert a liner into the air fryer basket, spread the zucchini mixture in a single even layer, and cook for 4 minutes. Carefully toss to redistribute the zucchini, then continue cooking for an additional 4 to 5 minutes until the parmesan turns golden and the zucchini becomes tender.

Notes

  • Avoid overcrowding the air fryer basket to ensure the zucchini crisps properly; cook in batches if necessary.
